I have books and Sekiro but 2 or 3 animes would be nice as well.

I haven't watched any anime from the last 2,5 years except for AoT S3 and Goblin Slayer, I liked both. Back in the day I also enjoyed Kaiji, Welcome to the NHK, Gode Geass, FMA, Gurren Lagann and Texhnolyze. I don't like SoL, school shit and kawaii ugu moe. Harem only, when it's actually funny and the protagonist is a real character like in "yahari ore no blabla" or what it's called.

Is there an anime from the last few seasons you could recommend me based on the stuff I like? Has there been a must-see-anime?

The closest thing to that description that comes to mind is Death March, but I wouldn't really recommend it.

IseSma has some episodes like that, although they have a distinct home, a large part of Garo: Vanishing Line, some of GATE.

Then Kamisama no Inai Nichiyoubi, where it's not a guy and doesn't fix a whole lot of problems. If you somehow haven't seen Kino no Tabi, there's that, and again Kino rarely fixes problems.

This might be a stretch, but I recommend Mononoke. The premise is about an occultist "medicine seller" who travels Japan during the Edo Period and vanquishes evil spirits that are terrorizing a specific location. It's in the horror genre so the atmosphere is very tense and nerve wracking in contrast to Mushishi, but it still has a unique art style and quality animation. I watched this back when I knew barely anything about Japanese history and folklore and I still enjoyed it.

Doesn't need to be shonen, but I like stuff in that sort of genre. I know about OPM, and Mob Psycho already. Also kinda is ideal if the show is also decently written. There was a show called Flame of Recca that had some good animation, but the writing was sort of eh.

I need to find this Cuckchannel meme. You may have heard of it. All that's known is that it's an animation first seen around 2011, lost to most people around 2015. It's about 9 or so girls, one specifically with a blonde hairstyle however not even that much is certain about it, the story is about them being stuck in a room, most likely a bathroom or similar rooms, after some discussion on how to leave, whether or not they even can, everything goes downhill and they kill each other. To be specific the only confirmed scenes I can give is one girl drowns, and another has her head crushed against the concrete. Very gorey and detailed, like Suehiro Maruo or Hiroshi Harada. If you believe you have seen this before or can find it just based off description and not interpretation you don't need to open the spoilers, and the animation also has no known name so giving you it's epithet that Cuckchan gave it would be useless, however over there it's known as Saki Sanobashi, which is most likely an incorrect title or misinterpretation of it, it is also known as Go For A Punch but neither title have given any results. It's unknown if this came from a manga before being turned into an animation, or if it's even an ova or a short animated student film, or a flash animation, all that's known is the description. I personally believe it to be a flash animation if it does exist but that's why I'm asking here. It may very well just be a creepypasta however unless like said above it's a flash animation or ova, while I've never seen it the description makes the whole thing seem like a metaphor for nihilism through use of realism, violence, and gore to show the human experience which is strange as all gorey anime either are tied to surrealism abstraction or scifi plots and the like. This one seems far too realistic and reliant on gore and theme as a center point to the point of deliberately being made as a creepypasta description, or made by someone who grew up on all other guro anime and made this a passion project however people have said the animation looks very old so that is also falsifiable.

That isn't how kanji works. Each individual symbol can have multiple readings and they don't necessarily mean much on their own without other kanji or okurigana next to them.

Now, let me give you some pills on Japanese since you don't seem to know what you're talking about. First, get romaji out of your system. They're bad for anything to do with actual Japanese. Learn the basics of the writing system and your kana first from wherever you can. Any Japanese Learning Thread will have more than enough resources to get you started on that, because that's the easy part but it on its own will open a lot of doors. Only after you've got a good grasp on that, you can try tackling kanji properly. I recommend using jewgle translate's handwriting feature since it doesn't care about things like stroke order or count and is generally pretty good at recognizing even the ugliest of scribbles. Even if there's a really complex kanji at a very small point size you can barely make out, try drawing a crude enough approximation and you should find what you're looking for. But use jewgle translate only for kanji recognition, do not use it for actual translation. For that, I recommend pasting the kanji or jukugo into jisho.org. That will give you a much better understanding of what's actually being said. You can even paste entire sentences into jisho and it generally does a pretty good job parsing them into individual "words" you can then read the definition of.

I don't know about that. Take as an example sentence pulled from an H doujin the sentence "ここのみんなは目的の本しか見えてないみたいだから", and plug it into i) Google Translate, ii) Bing Translate, and iii) Jisho.

Bing produces a translation that is grammatically and semantically valid English, and makes complete sense in context (an exhibitionist at Comiket).

Google produces a valid English sentence, but not one that makes real sense.

Jisho fails to even break down the clause "ここのみんなは" correctly, and that's something most anime watchers wouldn't need to plug into a translator in the first place.

If you really want to translate Japanese without knowing Japanese, you should be using many different tools and cross-referencing them with each other to build a translation yourself. Computers will give you the pieces, but you should not expect them to put it all together for you, and you need to be aware of both the context for what you're translating, and the limitations of the tools you're using. Even so, sometimes you'll hit a wall and have no idea what is being said.

Stop right there.

You can't translate any language without knowing it, don't even try. Japanese is especially bad for this because of how context dependent it is. I gave the jisho suggestion thinking of sentences with a lot of jukugo because that's what it's reasonably good at, but you still need to know a little bit of the language for things like ここのみんなは which you gave as an example. Jisho is still just a dictionary, not machine translation.

Depending entirely on machine translation is bad practice in the first place, so don't even consider it. You might get some decent results occasionally but if you let that trick you into thinking it's actually reliable you'd be making a mistake. The "technique" might work for a few common and simple sentences, but for anything that takes the least bit of human reckoning to solve they will either give you gibberish or, worse, give you something that seems valid but is actually completely wrong and you have no way of knowing better.
