Update to this post:
Turns out I was wrong when I said Olga's image showed a university qualification; the image actually shows her passport. I have no idea why she uploaded a photo of her passport to Facebook, but oh well, I'm not complaining; it makes digging for information much easier.
Here is the original Russian passport:

I am still struggling to find much information, however, about the origins of the Eganow family. As mentioned before, the surname Eganow is extremely rare, and I get very few results searching for it, even when searching birth records and so on. I have searched through both Russian and German records and found no birth or marriage records for either Taty or her parents, even when using the Russian Эганов and Эганова.
Curiously, I found several death certificates for Russian soldiers during both World Wars with the surname Eganow, who died in German prisoner of war camps. There is a record for a Georgij Eganow who died aged 28 in the Flossenbürg concentration camp:

Interestingly, Flossenbürg is only a ~1 hour drive from Taty's home of Lappersdorf/Regensburg.
There is also a record for a Roman Eganow who died in 1919 in Germany. He was also a Russian soldier who died in a prisoner of war camp.
