Well that depends on a number of factors:
How old is the kid? Much like veal, it's better to get them when they're young.
What nationality are they? Mexican kids tend to go better with salsa.
Probably your best bet is to fuck them first… That really tenderizes them nicely. After that, a little salt and pepper with just a hint of Spanish smoked paprika.
