Why hasn't there been a mecha fighting game? Like Super Robot Wars is fun and all, but I wanna punch Eva-01 in the face with Big O. The fact that this happened yet is disappointing.

Sounds like a really neat idea, I'd play it.
If you're talking about general mecha fighting games, there are some Gundam ones. Don't know if they're any good, though.

Thing is, I kinda want a crossover rather than strictly Gundam. And I'm surprised it hasn't been made already. Granted there WAS a 3D Fighter in the N64 days, but I'd like to see one in the modern day.

That exists. I can't remember the name of it, but the developers lost the licenses during the course of production, so they redesigned the robots. It isn't hard to tell what they were originally supposed to be.
Someone help remind me what I'm thinking of.

But it was Capcom hot on the Marvel license so I guess it's not impossible.

I would say Gundam Versus is pretty good so far as a fighting game. We are lacking in variety but at least we are getting some options now. Like that new virtual on that was announced.

I know that there is a SNES gundam fighting game, though I can't say much regarding gameplay quality. Not my genre, and I don't know what makes a "quality" fighting game.
Beyond that, I enjoyed the spritework and music, one particular track was really good..

yeah Endless Duel (the Wing one) is pretty good, especially handicapping for "licensed Super Famicom fighter"
the G Gundam SFC one isn't so hot, even handicapping for licensed fighter

Well, there was Super Robot Spirits for the N64. You got the R-1, Daitarn 3, Dunbine, Dancouga, God Gundam, Master Gundam, Walker Gallia, Voltes V and the Juddeca as the final boss.
