Well that is a bit really fucking vague. But there is some good shit that most people like and can get into in Gunbuster, Zeorymer, Gundam 0079, Zeta and ZZ, G Gundam, Aura Battler Dunbine, Armored Trooper VOTOMS was rad as hell too. For some relatively newer stuff there is Gurren Lagann, Linebarrels of Iron, the manga is infinitely better than the anime, though, Gun X Sword, Gaogaigar, it is a bit of a drag to be honest but it gets better later into the series, and its much better sequel Gaogaigar Final, Rahxephon has some good stuff early on, although it drops the ball later on.
Those are just a few recs I can give. There assloads more, but it wold help if you said what kind of things you like. There are series with heavy military and political intrigue, while some others lean more towards super-hero type characters some are kinda comedic, while some others are grim as fuck.

Early Universal Century stuff is all pretty good, 0079, Zeta, ZZ, Char's Counterattack. Although watching ZZ right after Zeta can be kind of jarring.
My personal favorite is Turn A, and Unicorn isn't too bad until the last episode. G Gundam is a very different tone from other Gundam series' but still fun to watch, the english dub just adds to the experience. A lot of people have nostalgia goggles on for Gundam Wing because they probably watched it as a kid on Toonami, but in my opinion it's not that great. It does have some neat suit designs in it, especially Tallgeese. You can watch Build Fighters right now on youtube, the show is half Gundam fan service and half gunpla commercial so I don't know how much you would like it if you don't recognize any of the suits or references.

I'd suggest starting with Gundam 0079 and then moving on to other real robot or super robot shows depending on what elements you enjoyed the most.

Well, like the others said, the most viable path to get the best out of Gundam is to watch the original 0079, or the movie compilations, then Zeta, maybe ZZ, and then CC for the big finale of Early UC. Some of the side stories are really good. Stuff like 0083: Stardust Memory, 0079: War in the Pocket and the 8th MS team. They have some sweet animation and pretty good stories.
After that you should just try out other series and see what you like. Turn A is good and even better if you have watched the UC gundams. Some of the alternate universe series vary in quality. G is fun, but is not really representative of Gundam to be honest. Wing and Endless Waltz have issues here and there, but they have some cool fight sequences. SEED and SEED Destiny are garbage. I personally like Gundam X. It is shorter than your average series, but the main char is a pretty rad dude.

Gunbuster-very good, short, action-packed with a solid story
Getter Robo (manga)-a classic, one of the most influential in the genre, gets batshit crazy in the 90's entries
The original Gundam tv series-really awesome war story with robots instead of tanks/planes, animation's pretty shit but the story is excellent
Gurren Lagann-if you really dislike old anime, it's not as good as some others but very digestable, basically a reimagining of Getter.

First step is deciding whether you prefer Real Robot or Super Robot (or both)
Real Robot are usually war stories, only with mecha instead of tanks. The characters are usually multi-faceted and flawed.
Super Robot usually only has one or two mecha, but of immense power. The enemy is often aliens or monsters, though it may be other mecha. The characters are usually hot-blooded and fun, and the final fight may have ridiculous scale.
The quintessential Real robot shows (though there are many other good examples) are Gundam and Macross.
If you want to get into Gundam, watch 0079 (either the series or the compilation films) then Zeta (don't watch the compilation films), ZZ and Char's Counterattack. From here, you can watch pretty much anything.
If you just want a short, well-animated Gundam series that doesn't require prior knowledge, go for 08th MS Team (slick ground combat in SE Asia) or 0080 (prepare for emotional pulls)
For Macross, go SDF Macross then Plus. A lot of people like Frontier too.
For Super Robo,
Personally, I would recommend starting with New Getter Robo (to get a feel for the characters) then move onto Getter Robo Armageddon

Don't let the cover fool you. Behind this the craziest shit anime ever written, made and then published by man. And yes, it has Mechas. The premise is that some some bearded Nobunage knock off is ravaging Sengoku Japan with a army o lase shooting death robots and the only faction that has fighting chance is a Ninja clan. They try everything to kill him. A normal ambush during the first battle, it didn't work, notNobunaga wins. Sniping with a long bow, it didn't work, notNobunaga wins. The most spectacular attempt was luring him into a rice field full of big torches, lit that shit on fire and trying to kill him there. Even the infamous poison trick fails. Why? Because notNobugana is fucking Terminator robot. At the end he gets so fucked up, that he decides to blow himself up. The OVA implies with a random scene that shows a huge space ship armada in the Clark Orbit of earth, that AYYs or Spacenoids are observing that crazy shit happening and are maybe behind it.

Just start with 79, since it sets up the context for the Universal Century timeline. From there on you're pretty free to explore as you please, but 79->0083->Zeta->ZZ->CCA will give you a good frame work for the history of the UC, and you can go back and watch side stories latter. 79 is the best starting point because it introduces you to everything and doesn't assume you already know the lore.
79, Zeta and CCA establish the basic story for the two central characters, Char and Amuro. 0083 uses a different cast but is historically relevant and explains why things have changed so much between 79 and Zeta. ZZ is a bit more optional but helps complete the arc.
Origin is for very lore intensive prequel to the main arc and it's best if you've watched all the aforementioned series for it to make any sense. But it's a good time investment. Unicorn is sappy and not that great, and takes place after the main arc. Save it until after you've finished CCA since it will spoiler some previous series.
0080, 008th MS team and Thunderbolt are all good but are side stories and only require you to have seen 79. F91 is based off some mangas that take place late in the timeline; read the manga first. Victory is set decades after everything else and the world has changed so much that it bears little relation to the other series, so you can watch it buy itself. IGLOO is unimportant animated shorts.
