Apparently Carlin was pretty influential. According to Encyclopaedia Britannica, before like 50s or 60s, stand-up was pretty different, the comedians would just tell generic, inoffensive jokes for middle class audiences. Lenny Bruce was among the first who changed it and would talk about controversial topics (race, religion, whatever) and would put his own opinion into his routines, but he died not being very successful. Richard Pryor and George Carlin kinda took his example and made that style popular.
All that said, he isn't actually that funny. I mean there are acts I really like, but lots contain kind of unimaginative superfluous swearing (or farts and stuff).
