My dad won a meat tray with a pork roast in it this week, so I cooked it up for a family dinner. Pot roast with potato, sweet potato, onion, butternut pumpkin and parsnip. Did some mixed boiled veggies with it, cauliflower, green beans, broccoli and carrot. Made some apple sauce from granny smith apples, brown sugar and water. Made gravy in the pan.
Came out pretty good. Meat was fatty, tender and I got a good crackle on the skin. Parsnips and onion caramelized without sticking to the pan. Dad gave half of his plate to the dog when he thought I wasn't looking. Fucker. Cleaned up and came home.
