there's three different "official" releases of the OT
The original unaltered release, warts and all, which is only on video tape and was eventually included as a lazyly put together extra on DVD release of the special edition as a "fuck you here's your shitty old movie" move instead of giving us the remastered version people actually wanted.
The 90's re-release that was remastered for better sound and picture quality but has no other edits. This would be the *best* version, but it only exists on video tapes and a European laser disc release. If you look hard enough you can find rips of the laser disc version, but it's still not as good as if there were proper dvd rips. Lucas intentionally refused to ever put this one out again in any form, making you have to suffer through his "improvements" if you want better sound, picture quality or wide screen..
The Special Edition. Yeah, we all hate this one, and the best you can do is find fan edits that tried to "de-specialize" the movie into something akin to the 90's remaster.

In his mind it was all about hiding all his old flaws and screw ups and making the project closer to the vision he had always wanted for the movie but just wasn't able to do in the 70s for budget/tech reasons. Frankly I think it's strange he threw in the largely redundant jabba scene but then still left out the cut early Luke and Biggs scene that actually was a huge amount of exposition about the empire, and makes him showing up later on at the rebel base and his death more meaningful.

Well, George never wanted those scenes in. He felt it just ruined the tension of the opening scene, the other editors wanted to keep it in, but he made the final decision and in my opinion rightfully so. The opening scene in the final cut is fantastic and splicing in the biggs scenes would have ruined it.

And removing it ruins a lot of tension in the trench battle because we have no connection to Biggs as a character. He's just another random xwing pilot that bites it. Though I'd respect his decision at lot more if he didn't later decide it was totally important to add the equally uneeded Jabba scene back in.

You can either go for the Harmy "De-Specialized editions" which are Frankenstein patchworks using multiple sources, or the Project 4K versions which are taken from scans of cinema prints scanned with either DNR or no DNR.
The important thing to remember though is neither of these are perfect quality. Personally I recommend the Project 4K versions, or at least 4K77 as both Empire and Jedi have fewer noticeable changes. I say noticeable because for every added Jabba scene and Jedi Rocks change that people scream about, there are a dozen other changes that nobody either notices or never talks about, because they're actually good changes. I won't lie and say that it doesn't bug me that there is no "unaltered" version of the film available for purchase, but the question is how "unaltered" do you want it?

I probably would bail. The series has lost its appeal since the awful 3D animated Clone Wars series and Disney taking over.
The Han Solo spinoff lost them money and all the announced projects sound shit.
The Gosling film is the only one I am even remotely curious about. The fact that he signed on makes me think Disney is trying to regain the male audience.
Not seen any of the Disney flicks, and I doubt I will watch another SW film.
