Alright, I sat down and wrote down some core bits on how I'd do a reboot that goes all the way back to WC1. Make the universe coherent. Still keep iconic elements like the Space Goats or Scourge.
Let's see:
1. No Demon Curse-Taken as WC3 framed it, Orcs are more or less "inherently noble" savages who are corrupted by outside agents. Not only is it too on the nose, but it's schizophrenic the moment you introduce a Orc like Garrosh. You can still have the Orcs reject their past ways for a new future, but it'd be less "returning" to an ideal past and more "rejecting" their old ways for a bright one.
2. No God Dragons-They were never helpful enough and can't be since the franchise focuses on the doings of moral armies. You can keep Alex and Co. as magical creatures who can wipe out a castle if they bothered, but they wouldn't be divine beings assigned by another set of gods.
3. No Burning Legion (as we know it)-The Legion don't work as a long-running villain for Azeroth. Even after all the retcons, there's no way to make a so-called inter-planetary army that fails to crush one world over and over look credible. Archimonde, Kil'Jaeden, Sargeras, etc., are all still around but have their roles shifted to fit a smaller Legion (like, they're just Sargeras' personal legion).
4. No Void Lords-Old Gods yeah. No to Void Lords. An obvious way to extend the franchise after Sargeras' defeat.
5. No Forsaken (as we know them)-The Forsaken are just a lore mess. They're a contrivance to let you play as a zombie in WoW. Much of their characterization/narrative is wonky. I'll stick to WC3's rules for Undeath (the only human-level behaving ones are Undead who weren't raised with the plague or commanders).
6. The Eredar and Draenei are separate-I just see the connection between the two unneeded.
7. The Night Elves ally with Horde-It matches with Early WC3. And well, they just fit going from their early art.

They're just "good" Eredar at their core (and the Eredar were there in WC3). I agree that bits like the Naaru and Light usage need to go or be toned down (I'm not fond of so many non-Alliance Paladins). I'd just incorporate enough of their retconned out WC3 backstory of them being a bunch of conquerors who destroyed their world and unleashed Arcane magic into the universe with Velen and Co. from a schism over how to proceed after such a disaster.
What about the other ideas? Like Horde Kal'dorei (see old map, note the colors of the NE regions)?

You keep yammering on about those.
While I agree that more bestial and savage nelves would be great, their alliance with the horde would really suck a lot of conflict out of the world. Why not have them in a tenuous peace, with some sub-factions (shamans and druids) wanting to ally closer, some sub-factions (old orcs and Staghelm) wanting to slaughter each other, and most wanting to just live to see another day against the wilderness of Kalimdor.
Conflict is fun, and there should be more of it. Horde already is a unified tri-race society, without counting the goblins, and having a peaceful federation of races sucks. If anything, Tauren, Trolls and Orcs should become separate entities.

Actually, I'd suggest a notable amount of Orcs convert to the Light/Human civilization and be in the Alliance as their Janissaries.

Might be cool. Probably wouldn't work though, due to humans (rightfully) hating orcs. Would work in Theramore tho.

Not fun enough. Nelves have a beef against orcs due to them killing Cenarius, but they don't really give a shit about Kul'tiras. Remember: conflict among races is everything in Warcraft, and it shouldn't be downplayed.

I should say that I'm trying to see Azeroth as more fractionalized. So besides a few exceptions there wouldn't be Races/Species/Whatever locked to one faction. So Alliance Orc would be one example.
