I also think the acquisition of FOX by Disney might have delayed the production.

Try the original series, if it's too cheesy for you then you can skip it and watch The Next Generation, then Deep Space 9, Voyager and Enterprise (it's a prequel to the original series but it's better to watch it after the others). Avoid Discovery, it has nothing to do with Star Trek.

you can start with TNG, TOS is good but it's old and before Star Trek was really established so things are off and/or changed later (Klingons look different etc).
DS9, and voyager wouldn't be the same if you never watched TNG and had no idea wtf was going on. You should really watch in the order they were actually released (TOS -> TNG -> DS9 -> VOY -> ENT)

If you want something similar to Orville then that would be either TNG, or Voyager. You should start with TNG since that's the one that established modern Trek universe. Voyager is it's dumber b-style knock-off, so I would leave that one for later. Then you can try a few episodes of TOS, but it's dated AF. (they all are products of their time, but TOS is the one where it shows the most.) Then you can continue with DS9, which is considered to be the darkest of them. It has more complex overarching plot, and is more serialized. I think it has less subtle writing than TNG, and kind of falls apart towards the end, but it's considered to be the best one by many people (it depends on personal preferences if you like more this one or TNG). The last one is Enterprise. They were scrapping the barrel with this one, and then it all went to shit, and we got Abrams and Kurtzman.
