I watch animu, read mango, play jap vidya and and vn:s, but I've never really listened to much weeb music apart from a few op/ed songs. Is there an infograph on something on where to start? What genres are out there? etc etc

I'm not sure if there is "weeb as in animu" music there other than OPs, EDs and character songs. Although character songs are something to look into, you can find some pretty surprising things. Other than that, some OPs and EDs aren't "anime original", just semi-random Japanese music they licensed. You can listen to them if you want to. E.g. I've found Frederic because of the OP of Koi to Uso.
And also there are the endless Touhou remixes. Start with Shibayan Records. Oh, and Symphogear is a thing of its own. Also, all the idolshit is out there, from Love Live to Idol Jihen.

This isn't just japan, the music of any asian country nowadays is 99% pop trash. Just like the west except they never had something like rock music before it.
If you want weeb music you're confined to anime songs and hidden gems, or classical.

Shibayan is a good start. There's a collection of that and Touhou Jazz music at Nyaa.pantsu. NEETs would also be a good thing to listen to IMO.

I come across many songs listening to radio stations. This right here is great as it covers many genres and has lots of comfy music.

Grab Jdownloader 2 and start downloading Discographies from this site. Also check out some doujin music from Comiket. They can put out some good some sometimes. Vid related is a sample and you can find the whole CD on Hikarino.
If you want to buy CDs then Amazon.co.jp and CDjapan are good places to find them. Same with Amiami. If you want doujin works, then Melonbooks, Toranora, and Amazon.co.jp are the best places I've seen so far.

Nip music is really fucking great man. I ended up with a gigantic collection of really, really awesome stuff over the past years and now my music player has about 150 gigs of it permanently available. It actually makes up 99% of what I listen to anymore, now that I think about it. I guess somewhere along the way I turned into a giant weebshit.
The older jazz, funk and city-pop from the 70's up to the 90's is what really cranks my handle after being indoctrinated by vaporwave. It's concentrated dreamy Japanese nostalgia injected straight into your dome.
A lot of great artists, old and new, can be discovered simply by listening to the stuff on jewtube and going through recommendations. Then find it on soulseek. Soulseek very rarely lets me down and I usually find everything except the most obscure artists. Even if it takes a few tries sometimes.
I listen to jpopsuki radio a lot too to discover new jpop artists and I've gotten a lot of my music from there as well. It would be ideal to actually have an account on jpopsuki but since it's a private tracker, their radio + soulseek will tend to your needs in its place. http://jpopsuki.fm/
https://chiru.no/ also has a good station.
For actual animu and game audio you can pretty much find it all on nyaa. Just make sure to try searching by the show's Japanese title if you're not getting many or any results with the english/romaji.
Other anons also gave good advice.
Enjoy!

Any time. What I forgot to mention is that there are remixes too, if you are interested in that.
