My dad is interested in getting into some anime, and I'd like to expose him to good, high quality anime with great story and production, great characters and all that.
No nudity or lewd stuff, no edgy or hyperactive stuff, no cutesie stuff or comedy or slice of life, please. My dad has an open mind but this is my one shot at exposing him to a new medium and to show him what it has to offer to him.
So far what I think would be good to show him is Akira, Grave of the Fireflies, Jin-Roh: The Wolf Bridage, Memories and Ping Pong The Animation. I considered including Angel's Egg to the list but I think that's too artsie and slow for his tastes, I'm not sure.
Is there anything else /rec/ thinks would be good to share with my dad? Thank you! I'll answer any questions about him I'm able to if it would help to receive good recommendations.

What kind of media does he like? Because if he likes spaghetti Western, then Fist of the North Star, or maybe even the first season of JoJo could work. In their core all of these are about manly man doing manly things. Japs just do it with a lot more screaming.

This, his preferred genres of non-anime, as well as factors like his age and what he might have already seen are worth taking into account.
For example, if he happened to watch something like Speed Racer or other old animation as a kid, he'd probably have a predisposition to liking older stuff with a 60s/70s style, hand-painted instead of digital backgrounds, etc. In that case something like Castle of Cagliostro would be a good choice.
If he's into modern action/sci-fi then GitS is probably the best choice among Oshii stuff. I wouldn't consider Fireflies unless he already happens to have relevant historical interest, and Ping Pong/Yuasa in general is also a dodgy choice because of how extremely stylized it is, it's probably the least accessible out of what you listed.

Well, if nothing else it's a safe bet that he wouldn't be really interested in the shenanigans of Japanese high schoolers, so a sizeable amount of shows are gone. And it might be a very "low effort" advice, but take a look at the stickied thread with the charts. Maybe something will just click with your mind based on what you know about your father.

Jin-Roh: The Wolf Bridage is convoluted shit, he's not gonna like it
>>8943 i'd say FOTNS is good, but considering how long it is he might not like it at first. Jojo is an easier alternative
berserk is great in every aspect aside from everything other than the animated series being shit
hajime no ippo is definitely a good recommendation, even if it drags on a bit

You could also ease him into it by showing him some stuff from primo Japanese directors such as Akira Kurosawa.
I actually think he'd really enjoy Kurosawa's movies, based on your list. I also think that he would really enjoy anything starring or directed by Takeshi Kitano, but that is only based on my gut feeling. Takeshi Kitano is one of my absolute favorites of all time and something you should look into yourself, if you haven't already, OP.
As for anime, I actually agree with >>8962 's advice. But perhaps getting him eased into the movies first wouldn't hurt.

Baccano. Black Lagoon. Darker Than Black.
One of those three has worked for every person I've even shown anime to.

Monster

Great thriller story, well written, the manga is great but the anime looks faithful, I read it all and watched the first few episodes.
I've similar tastes to your dad in movies and I came here looking for similar anime, looking to get back into it.
I found the patlabor movies to have a great story too, really beautiful animation

I've seen the first 2 but not the third, great pacing, directing, cinematography, real kino.
