OP, there was some other German anon who asked for good spots to wild camp in Germany, I gave him some GPS coords of places I've been to, all close to or in the Netherlands. In fact, in the NL it's illegal to wild camp AFAIK, but no one gives a fuck. Here in Germany, it is in fact legal (outside of Naturschutzgebiete and privately owned land that's occupied), but every fucker will call the cops on your ass if you're unlucky.
So yeah, I feel you, but it's far from as bad as you imagine it to be. Get your gear together and go out, just do it. Here in SH we can tour rivers and lakes, camp near them and be mostly unharassed. You can also join the Pfadfinder (at any age IIRC) and do a lot of /out/ shit with others.
It would be useful to know where you are from and where you want to (and can) go to. As long as you remain out of sight, out of hunting grounds during the hunting seasons and off the beaten path, no one should really harass you.
In fact, I've been camping near roads for the most part, just took my bike and gear maybe 20-50 meters inside the forest, often less, setup my hammock, go to sleep, pack up in the morning and was never harassed.
I've also stayed at monuments and the like when I didn't yet have my hammock setup, just took my insulation pad, sleeping bag and a bivy sack and rolled out on some stone bench. Isn't maximum comfy, but works and besides drunk youths there's hardly ever people there.

If you actually want to get out, theres plenty of opportunity and the possibility to get caught only adds to the experience. Stay between the lines of drift and you should be fine. Learn some hunting terminology perhaps so you can talk to hunters appropriately. If you get caught by someone without a rifle, just run.
