in the adirondacks, we fish for brook trout and cook em up on the spot, even in the canoe if necessary (fresher is better obviously)
typically just use whatever fat and some salt/pepper. they're really pretty good on their own. and typically the smaller ones are tastier for some reason
always be careful of pollution. e.g.,
http://www.health.ny.gov/environmental/outdoors/fish/health_advisories/regional/adirondack.htmin the adirondacks at least, it's always safer to eat brook trout than any kind of lake fish. and bottom feeders are basically no-go in any kind of lake. because the lakes collect the toxins, which settle on the lakebed…
be careful, and don't forget to bring some oil and salt!
