If he absorbed all the souls, and San's was a human, he would have had eight souls inside him.

I'll agree that Chara isn't good, but from what I understand, the three are supposed to be the same thing. The Fallen hates humans, and tries to use monsters to kill them, but then fucks up and dies. Frisk is the fallen's reincarnation who isn't motivated by the demon, all other possible routes are reincarnations who are influenced by the demon (who merges with the human you control in the genocide route).

I'll agree mostly with that first part. The demon is a part of "you", while "Chara" is the original first human who goes, through death, from wanting to kill all humans to wanting to destroy the world.

No the Fallen is a separate character. Whom clearly has different ambitions compared to the demon at the end of a genocide run, who, yes is obviously not you since they attempt to dupe you out of your pacifist save because of the established fact that a human/monster is not strong enough to destroy the barrier alone.
MEANING that the demon would be stuck in the barrier after a genocide run unable to kill off the rest of the world and complete their goal of the destruction of humankind.
Compared to the fallen who was a dumb kid that didn't like humans and wanted to chill woth monsters, and only got really murdery when he poisoned asgore.
The nuance seems to point in the direction of the two being descrete entities, separate from both the player and eachother. Or, alternatively The Fallen is a direct metaphor for you yourself for deciding to play the game and going up to the mountain. Literally.
Storywise the fallen and the demon at the end of the game being one and the same seems contradictory.

This is never mentioned anywhere. All we know about Chara is they went to the mountain for something that was "not a happy reason". Chara's only desire before landing in the Underground seemed most reasonably to be suicide.
Also, it's never been proven that poisoning Asgore was intentional.

I'd say that the demon is more what Chara turns into. Chara's soul ends up stuck underground in that garden patch until the player comes along and injects it with some determination.

It is a little vague on the why, true.

I don't know about that. "Not a happy reason" can mean a bunch of things. Asriel does say that Chara "hated humanity", and it can be assumed that his hatred was why he climbed the mountain. Maybe suicide, maybe he was running away from a crime he committed, there are definitely a few options, but certainly the goal of his plan using his own death was to kill humans.
