Peasant, let me tell you. There are a variety of mods and historical themes for all games. Paradox games usually take the cake. For this audience, I am recommending Mount and Blade: With Fire and Sword's mod called "English Civil War".

Seven Kingdom Ancient Adversaries is a nice one for a monarchist. The other obvious answer is Paradox games as you mentioned (EUIV).
Personally, I've been playing Solarus: DX when I get the chance lately.

Using Victoria 2 as Communist/Republican/Associated Filthy Revolutionaries Removal Simulator makes for a good time, and it has the least amount of DLC of any Paradox title. Shame Tolkienian Agrarian State is impossible
Not the best example and a pretty weeby one but Ni no Kuni II has you play a child-king and become glorious High King of the planet. It's very clearly made for a younger audience so don't expect anything overly complex (I'd suggest cranking the difficulty up to max at the start, the game is otherwise really easy).
The Cossacks games are alright if you want an Age of Empires deal but with a much more realistic army scale. You can pull off actual Tercio formations and it looks very pretty.

Dark Souls seem kind of monarchistic. I guess mostly traditionalistic but the story in Dark Souls 2 is about the player character basically saving a nation plagued by demons and becoming the new monarch after the first was defeated by an army of giants.

I'm playing as The Big Blue Blob France, /monarchy/, what idea groups should I take and in which order? Espionage and Naval are not allowed. Initial opinions have forced my starting rivals as England, Burgundy, and Austria; it looks like my alliances are going to be Castile, Provence, Scotland, maybe Savoy, and I'll save my fifth slot for a vassal or to mess around in Ireland.
Any thoughts for the playthrough until 1500? Keep in mind I'm kind of a shite EUIV player.
I'm obviously staying Catholic. Any other requests?

I always take religious and rush Deus Vult CB. Not just for the memes but it cuts your AE in half and you can use it against any heretic or heathen nation. I’m currently playing a game as France where I blob into Africa using Deus Vult and that nice missionary strength.
