How does she know what the Sun is? Has she visited our galaxy at some point?

Typical Disney-tier worldbuilding. Also if that wasn't ridiculous enough, she practices astrology despite that she travels through space for the majority of her life. How do you even take part in shit like that when the stars are always in motion from your perspective and never form consistent constellation?

What is she even saying?

It makes no sense to believe in the prospect of having hope in the future; that's just having hope now.

You can believe in or practice astrology simply because the stars were a certain way when you were born. The radiation coming from the heavens was different for you than for other people born at different times. Maybe it affected your brain or something, I don't know. It's tough when you start talking about fortunes instead of personal insights. When you start talking fortunes what you're saying is absolutely true.

It's not? It's "The Sun" and not "a sun". It's true that many people refer to stars as "suns" but in this case she said "The" which implies she's referring to it in particular. She should have just said "day" or something.

If you were living in a system with a single star you'd refer to it as "the sun". To be more "Star Wars" I guess the quote could have used a proper name for a particular system, since in the EU most system names were the name of the Star(s) at the center of that system.

There is a scene in TPM where Shmi refers to the twin stars in Tatooine as "the suns", so there is precedent for starts to be generically referred to as "suns" in the /sw/ universe.

This character, in the canon, believes in the concept of astrology.

Astrology doesn't make sense in a science fiction context since the stars are going to look completely different depending on which planet you're on, and therefore there can be no such thing as an astrological sign or zodiac.
