I'm interested in this too. I've always wanted to play Galaxies but never got around to it. Are they are any texture/graphics mods for this game by any chance?

Personally only the space gameplay is worth bothering with for that long, even pre-NGE. I've got a pilot somewhere in the mid-late Rebel flight missions though.

I played it on a fan server a few years ago and the community is still big

how good are the private servers now? About on par with wow in terms of functionality? It's probably been a decade since i've even thought about this game and the emu front seemed to be going nowhere.

There's two kinds of private servers, there's the swgemu derived ones which have most of the core functions but are still miles away from shit people care about like JTL and then there's the ones based on leaked NGE sourcecode. Those are pretty good if you don't mind the NGE.
