green box over plagueis but not cloak of deception, shadow hunter or lockdown? ok, but you probably shouldn't even read plagueis without reading those first because. That's a mistake people often make. Plagueis should be the last book you read before the phantom menace.
Those were some of the areas that caught my attention immediately, but maybe you just don't like the prequel era that much? The reading guide also just gives you an impression that you should skip anything without a box over it. Not to mention it's not the best chronological guide either. I'd read Imperical Commando after Order 66 and get the series over with while the characters are still fresh in my head. Maul: Lockdown happens before shadow hunter or cloak of deception. I think if you'd just call it "my favourite eu books" it'd make more sense. Otherwise, a comprehensive list like timeline.net that includes short stories etc I think is simply the best help you can give someone. Essential Readers companion wasn't horrible either if I recall correctly, but it's outdated.

that was my EU starter pack when I was 10 and didn't read much and only had a few random localized star wars comics (some of the classic aurra sing ones and the aotc graphic novel)
I also only beat Bounty Hunter for the first time on a gamecube emulator when I was 22. I'm glad I had a pretty small collection then, because now I can just pirate everything/get it digital, any comic book I want etc and I probably unironically appreciate it more.

That's quite the challenge… That's over 30 years of content. Unless you're not planning on reading essential guides, roleplay guides, bios, encyclopedias and trading card info, then it should be significantly shorter unless you're planning on playing SWTOR. Or do you just want viewable media like tv, movies, cartoons and video game cutscenes? But if you're really gonna take the big dive and do "everything", then this is the chronological order:

but like mentioned above I recommend sticking to

for most foolproof chronology/least amount of mistakes. Just CTRL + F your way through there and it should be a cakewalk. Any series of novels that tie directly into each other should probably be read back to back though so the continuity and drama doesn't feel too disjointed.
