I realized that while very tiny com-links are everywhere in Star Wars, there aren't any mentions of cell-phones or the like (the difference being you can't dial anyone with a comlink or make a 1 on 1 call, your communication is audible to anyone on that frequency). Only video games that show up are space fighter simulators (which can be repurposed for porn viewing) and playing board games against a droid that is holoprojecting the pieces.
Are there any other real world technology that doesn't seem to exist in the EU? I find the idea fascinating.

They don't have the internet like we do. They have the holonet, which is more like a cross between the internet and TV. There is no Wikipedia or other free sources of information, everything is behind a paywall or some kind of membership usually. But only groups like the Jedi had major information banks at their disposal and they had entire departments working on it as their information service. Also accessing the holonet is not easy or cheap like it is around here.

Their droids probably handle all the stuff we'd use a smartphone for. If it's portability they're looking for, they could easily have a device small enough to fit in a billfold that projects a holographic interface allowing them to access those functions without needing a full-sized smartphone.

In some of the books, comlink "frequencies" are described as an analogue to phone numbers and are usable for isolated calls. Remember that most of what we see in the films is the actions of military or militant organizations, not everyday civilian life, so our view of technology is somewhat slanted. Perhaps the reason Obi-Wan went straight to paywalled archives and not Wikipedia is that he knew the information he wanted wasn't public domain. Actual historians don't use web searches for their research either, they go straight to peer-reviewed journals.

Which ones? Only way to isolate a comlink call in what I've read is to either use a frequency no else one knows and/or encrypt the signal, both of which effectively requires a physical message to the other party to start.

Again, difference in civilian and militant life. Rogue Squadron benefits from using dedicated radios (and I'd imagine outer rim life in general is centered around an analogue to CB radios rather than cell phones) over a cell phone type device. However, it is worth noting that your example shows Star Wars is lacking a different technology—frequency switchers. Most military comm systems are constantly switching between a whole range of frequencies as they operate, and you can't just tune in at any time.
