I'm not the same guy, but most artists hope everyone can enjoy their work, and that it's timeless and transcendental. There's a difference between wanting those things and pandering to the public, though. When you're aiming only to make something enjoyable for all rather than with any prior vision in mind, it's more pandering than anything else.
On the other hand, I can't say I'm particularly concerned about the artistic merit of themed hotels. They're supposed to pander with their theme to attract customers. As others have mentioned, the theme does come across as generic space fare, at least as it's currently implemented (the Cloud City idea would've been better), but we're the wrong audience for themed hotels anyway.

For starters, base it on locations from Star Wars.
I would have the bar and lobby be inspired by Mos Eisley and the Cantina - browns , maybe an animatronic jizz band playing the cantina song. Have ‘pod racing’ be featured on the TV at the bar.
For the floors, I’d consider doing different theme floors, like a Death Star floor where it’s the hallway from the shootout in ANH. Give the rooms on that floor an Emperor’s Throne room feel.
Have rooms be inspired by the Millenium Falcon, with the same look. Maybe have the 3d chess table and have it have some interactive games as a big tablet.
If you have even some imagination you can think of some good ideas that will feel Star Wars. The appeal of the place should be going to places from the movie, not being on some shit ship nobody’s ever seen. This is generic space hotel with Star Wars branding. It shocks me how unimaginative the Toydarians have become.
