If you were to take away music from many different forms of media, it would completely ruin it. It's something that people take for granted from it's wide range of influence.
The music in undertale was one of those things that just meshed incredibly well with everything else in the game.
The artstyle was pseudo "retro" and the music was reflected in that. It's joking when it wants to be, it's emotional when it wants to be, and it's disturbing when it wants to be.
I'd wager though, that one of the major reasons why this game stuck out so much when it was released was it's music.

The music goes from /comfy/ like Snowdin town to hardcore shit like Megalovania, and absolutely terrifying shit like the music in the genocide route.
I think the soundtrack is a huge part of the game, but the characters and setting are very unique and interesting as well.
I don't think we'll see another game like this for a long time.

Half of why the game is great is the music and how the music makes every moment important and special. People who don't appreciate that little detail - which is made a huge part of this game - probably don't like the game.

I came to realize this after almost losing all interest of the game despite checking in on /mtt/ often.
It was when I heard bits or melodies of the soundtrack.
I think it's kind of amplifying the game a lot, the music.

It's not strictly that the music itself was good (I enjoy it) but one thing I really noticed was how in-sync with their respective battles the music was. Each beat seemed to fit with the motions that you would have to dodge, from the flying croissants to Toriel's spreading fire to Mettaton's legs.
How would you describe that?

I would call that good characterization of the projectiles. A lot of the fights revolved around themes like bravery or patience.
Example, orange attacks require you to move through them, while light blue requires you to stand still. Green resembles kindness, which can appear in healing items, or sheilds you from Undyne's attacks. The actions you do are characterized by these virtues in the gameplay.

Asgore takes bravery to face, but he himself is a cuck and a coward. Even Toriel calls him out, "If you wanted to free us so bad, why didn't you cross the barrier, kill 6 humans, then open up the passage? Instead you hid in the Underground, hoping another human wouldn't show up. But you couldn't decide not to kill them either." He half-assed his multiple child homicide.
