I stopped doing that two months ago, and I still get extremely tired after eating carbohydrates such as bread, pasta or rice. Even resistant starches which do not spike insulin make me tired. I'm getting increasingly anxious that sticking to low-carb, fasting and keto routine for so long has broken my metabolism or gut microbiomes or both irreversibly because I'm not seeing signs of any improvements.

you can drink a tablespoon apple cider vinegar in one glass of water ~15 mins before eating to counteract that effect.
the whole keto thing is a meme and its all about money. you need to make your meals with a protein, a carb, and a fat with plenty of veggies for long lasting effects of body composition.
sometimes if I'm eating some garbage food, I will just eat a healthy meal with it (and plenty of fats for satiety)
that usually holds me over for a while instead of just loading on refined carbs and not triggering a leptin reponse to tell me when I'm full.
just some advice…

I wasn't insulin resistant before trying this to lose weight for extended period of time. I could eat tons but never felt tired afterwards unless really stuffed such as after Rax buffet visit.
