Vanilla is always the go to, and is good with berries and whipped cream.
Also love peach, banana, coconut, coffee, and mint. I don't care nearly as much for mint chocolate chip though. All too often the chocolate bits just ruin the mouth feel. I'm fine with bits of fruit, but for some reason I can't stand hard chunks.

I am told that a stand mixer and some dry ice or liquid nitrogen work.
The old fashioned way would be to whip the ice cream base inside a bain marie but with salted ice in the tempering bath instead of hot water. Salting the ice makes the ice melt, absorbing heat, lowering the temperature. Keep adding ice to the tempering bath as needed.
Liquid nitrogen is more fun, but dry ice is easier to get.
