Chocolate, like cheese, is something I can only eat by itself if I'm drunk or high. Sober I find these kinds of foods absolutely necessary to blend, like an herb or spice. I am told that a stand mixer and some dry ice or liquid nitrogen work.
The old fashioned way would be to whip the ice cream base inside a bain marie but with salted ice in the tempering bath instead of hot water. Salting the ice makes the ice melt, absorbing heat, lowering the temperature. Keep adding ice to the tempering bath as needed.
Liquid nitrogen is more fun, but dry ice is easier to get.
