In France they used to drown ortolans (a type of bird) in Armagnac, also a a custom dating back centuries. The dish was so popular that the bird almost went extinct.

You might check a used restaurant supply warehouse; that can get you a commercial slicer with a big razor sharp smooth (not serrated!) blade and slides that are designed to run smoothly forever.
