Check the thrift stores.
There were some pretty well made handcrank powered slicers back in the 1950s and 1960s, and now a lot of the people who had them are dying.
They're getting migrated from grandma's basement to the estate auction or thrift store.
Modern ones, electric power and the like, can be readily had at hunting supply outfitters. Gotta do something with the kills, apparently slicing it up for jerky is popular.

A lot of the new ones are junk below the $100 range.
You might check a used restaurant supply warehouse; that can get you a commercial slicer with a big razor sharp smooth (not serrated!) blade and slides that are designed to run smoothly forever.
Or, you know, make friends with old grandmotherly types. They probably would be thrilled if some of their old gear went to someone who will actually USE it, instead of into the rubbish, now that they don't slice up hams much anymore.

Not too big.
Maybe a 14"x14"x30" box.
But yeah, get once you're in the new place.

I tried to research it. The best I could find is that if you vacuum seal meat and then heat it with water, these bubbles allegedly form.

Yeah, I though it was liquid nitrogen at first, but liquid nitrogen is colorless. Also, there'd be more condensation. What she has is literal steam. She does it again in embed related.
