We do have a lot of potato dishes or at least have potatoes in them, like fadge, coddle and boxty, the aforementioned boxty is often considered to be a pancake but it's more like fried mashed potatoes, we also have other non-potato dishes like barmbrack and soda bread.

I'd put Vietnamese up there with Japanese any day. They have some fantastic stuff. The current "we're communists so nobody gets any decent ingredients" regime has fucked things up there in their own country, but you can get fabulous Viet food in Seattle, Louisiana, and other places where Vietnamese people fled to.

It's the same all over Asia. Look at the Michelin stars given to all the mediocre street food places in HK and Singapore. They did Taiwan last year but I haven't tried going to any of them here yet.
Note in particular that their Michelin star for Din Tai Fung was given to one in California. The DTFs here in Taiwan are good, but I wouldn't rank them as some grand culinary treasure. And going by the Tim Ho Wan here in downtown Taipei, I can't imagine that the one in Hong Kong is deserving of any accolades.
There ARE good restaurants here (Taipei, Free and Independent Republic of Taiwan). Some of the best are even street vendor stalls. None of the ones I know got any mention by the Michelin people, though.
