>go to a new church
>pastor/priest rarely talks about parts from the bible or even mentions verses
>instead speaks like a motivational coach and shares personal stories of people they know
What is the explanation to this?

Same thing happened to me in one church I went to. Went to a Bible study group and had some good discussions then the sermon ended up being some weird storytime without any scripture or direction really.
I asked a friend from the Church afterwards why it was like that and they thought it was to attract more new members by not getting too deep into doctrine and focusing on the message . That made sense to me since I have left a church before for preaching doctrines I didn't agree with.(dispensationalism to an extent of essentially saying Jews didn't need Christ since they are chosen and if you didn't support the nation of Israel you weren't a true Christian)
I disagree with the practice of keeping your beliefs vague to get more members but it seems the most likely explanation.

Never seen that happen. Every mass every day has several Biblical references in the missal.
