While I do think translators should seek to do the best job they can and generally stay faithful to the source material, you can't really compare those.
You're translating entertainment, the goal is to entertain, and that may sometimes involve changing things so that the reader from a different language and culture can be entertained by it. While I'm generally against localization and jelly donuts will always be too much, there's a lot of jokes and references that will simply die if you translate them directly, because non-Japanese people will not understand it or understand why it's meant to be funny, even if they're familiar with itadakimasus and other Japanese cultural basics.
And that's ignoring the fact that most anime/manga is not written by literature masterminds making their next magnum opus, the vast majority of it is written by the kind of people who have given us 8 million iterations of the same trashy isekai, working on soul crunching deadlines and fanservicing mass audiences and stretching the story past it's expiration date in order to survive in Japanese work culture and manga/anime industry. There may be parts that can be made funnier, more emotional or logical and less awkward by shuffling sentences around a bit or switching words or something, without changing the overall intention. Of course changing things is a slippery slope and as a rule of thumb it should be avoided because terrible translators will always do a terrible job at it and just make things worse, but the good translator that you wish everyone was may be able to improve the readability and entertainment value of the work they translate by not doing a 100% accurate translation.
And there's another 2 points to consider. First is that there's countless of manga that remains untranslated even with all the rampant shitlations that are going around. Even some very appealing manga are lying in a corner somewhere right now with nobody to translate it, you can't really expect a masterful translation of everything. They're picked up by normal people who, second point; are doing it for no compensation whatsoever. Meanwhile those people working on """proper fields""" are being paid who knows what kind of megabucks for their precision work, of course they have the drive for excellence when their luxurious lifestyle depends on it.

The original author would probably change it as well if they could translate it.
