The anime adaptation covers a single story arc. There is an introduction, progression, and resolution contained within it. A single episode would not be able to do this and would only serve as a showcase at best. It could be continued to additional story arcs as the manga is, and sometimes you do get another season, but this is really just decided by how it profits.

Above anons are correct that most anime is just a way to sample manga/ln so that you get a taste for it and want to seek out the original material (i.e. an ad). It depends on the manga. Depending on what it is, it's not even worth trying. Not everything benefits from animation. Sometimes adaptations make enough improvements that they end up being the superior version. Sometimes the anime adaptation ends up being completely different, and that is probably my favorite possibility, but it used to be a lot more common. Differences between each version tend to make things more interesting to me, so I can read and watch everything.

This is not a problem specific to animu. "the book is better" is a old meme for a reason you're always going to lose something in translation to another format.
Video does have some story telling advantages namely its easier to create emotional impacts when you have music, voice acting and moving pictures rather than just text or even text+pictures. And of course action sequences will almost always be far more exiting provided the animators aren't incompetent, lazy or put on impossible time constraints.
