Everything is soup stock if you are brave enough.

It's soupstock based on fried flying fish (the one in the bottle) and bullet tuna (a bonito-like species of tuna) which is the most staple species for katsuobushi (skipjack tuna makes higher quality and bonito is used as a cheaper alternative).
The flying fish is edible but not suggested since its both used to keep some kick on the broth plus its consistency is shit, as would normally be expected by fried fish embalmed in liquid.
