I found this very cool Minecraft mod called Legacy4J which, to put it simply, brings Minecraft Legacy Console ediitons (Xbox 360, PS3, PS4, Xbox One, PSVita, Wii U and Nintendo Switch edition) to Java, it includes the old crafting and inventory management system, controller support, the older versions of the mod (pre 1.21) help you to identify how to open the crafting and inventory depending on your controller by changing this in the settings, the mod also includes the old gamma slider, tutorial world (last title update tutorial world) and the HUD display is closer to the centre of the screen much like in Legacy Console edition. I suggest you also install the mod's official modpack which is Re-Console which adds extra stuff. You can find the mod on Modrinth and Curseforge. It is also compatible with most mainstream mod loaders except for the modpack, Re-Console.
