It's a few things.
There are 2 abilities that will save you.
Once more keeps you from dying as long as you have more than 1 HP. So if I have 2 HP and get comboed as long as I don't break out of the combo and recover or change Sora's current state of action I will survive indefinitely.
Then leaf bracer. It allows me to cast a heal spell and not die as long as the animation is going.
So with those I allow him to juggle me during long combos and then heal once I am sure I can counter what is coming next. If I block an attack and keep blocking eventually he will calm down and I can combo him. Just do that over and over and you win. His combos last so long my MP is back by the time it's done and I can heal.

The point isn't that I dislike games that don't do it, but I like when a game acknowledges a higher level of play then what might be standard.
You can't beat an RPG at level one. And most will force you to level to progress. Even if it's at a tedious pace. Some do some don't.
Games like KH and DS give players an option to level past the difficulty, or allow them to cease leveling either by the souls mechanic or KH having an ability that simply halts EXP gain.
A lot of games don't allow for player options like this. They tend to want everyone to play on the same level generally.

When intimate knowledge of a game allows for more varied game play I am instantly turned on. So many bosses felt like I was just mashing the attack button.
