From my limited understanding the undertale/touhou thing had been on going. undertale/x was a thing in general. At some point someone remade the Bad Apple, shadow video with undertale characters, it got good views, and everyone in the comments claimed it was all from undertales. There was also several times, that even I recall hearing around the time of undertales release that everyone kept saying it was easy modo bullet hell, "you should try something like Touhou instead", basically sending people that way, presumably. This last part I'm not to sure about but, apparently many people saw similarities to LoLK Pointdevice Mode made Undies determination save. Since they both in game explain respawn/save scumming, as well as some other similar concepts, in a "if you like this, you'll love that" kind of way.

Sadly is the norm based on my observation. While it would be unfair to say all are like that, there's a higher chance of finding bad apples that stick out because so many people are posting there. To some it's more interesting to talk or fling shit at video games than it is to actually play them (Then again with how bad the industry has gotten to where psychologists are being hired to turn people into whales with flashing lights, cues and all that feel good stuff, some have a reason to be that way.)

In Undertale, gaining LVs makes you stronger. It's as simple as that. Monsters are obstacles that keep you from growing stronger, meaning that they need to be eliminated. I felt very unsatisfied with the Pacifist ending because I felt like my character was actually weaker than when he first started off. He might've gained friends but he never grew at all. On the other hand, when I decided to follow the Genocide path, my character was constantly growing and at the same time I was rewarded with two really fun boss-fights that kept me at the edge of my seat. I see the world of Undertale being destroyed at the end to be a sign that you should get some fresh air and become stronger in real life.
Let's say that I want to make mayonnaise. The "Pacifist" solution would be to ask for someone else to make the mayonnaise for me, while the "Genocide" solution is to make it myself.
