The true answer is that you don't. Phones are inherently insecure, and almost no amount of hardening will ever keep eyes off of you. You'd be better off buying a dumb phone and carrying around a laptop.

If you rooted it throw a pajeet custom rom like LineageOS on there. Don't install Gapps and use Fdroid and ween yourself off botnet stuff.

Thats about the best you can do with phones. Their baseband modems and communication protocols are very insecure and not really privacy orientated. The best advice is to get a landline and use encryption on digital communications like email, sms, and calls if possible.

For laptops, using stuff that has Intel management engine or AMD PSP removed, disabled, or neutralized are preferred. You have MacOS in your pic, so you still have the electronic jew on your laptop if thats your pic.
