I had an eating disorder in the past so I cant speak for everyone but counting calories messes with my head majorly so I can relate.
I food journal instead (no numbers, just descriptions) following these rough guidelines:
vegetables or fruit at every meal
stop eating when full
save eating for breakfast, lunch , and dinner only (so no snacks)

get some kind of exercise in daily
I also weigh myself weekly so I can make adjustments to my "meal plan" if necessary"
