Chef John is a hack imho. He dumbs down a lot of recipes and sells them as "easier but just as good" which isn't the case. He is still OK if you start with cooking as he does explains techiques and stuff. I hate what he does with his voice. His videos from the first two years are better because he talks like a normal person.

Food emperor is pretty decent cook as far as meme channels go. He even prepares things like ice cream, bread, ketchup and so on, something that many other channels would just recommend getting store bought. Videos in Polish and Italian are much better then English ones, since in those he gets more creative with descriptions and humor. There are a few videos in Danish and Swedish too, but I have no idea how they compare.

Hiroyuki Terada is good if you are in the mood for more 'grotesque' stuff. Some of his videos involve butchering animals for recipes.

I found Helen Rennie's channel when looking for how to cook fish and tips on how to get sous vide meats to brown better. She has background as a professional chef and a cooking teacher, and it definitely shows in videos. Unlike many youtube cooks, she thoroughly explains what she does, why she does it, what ingredients and tools she uses and why. Basics videos are especially good. She is mostly no-nonsense, experiments, examines some culinary misconceptions, and uses niche ingredients from time to time. Her recipes introduced me to pomegranate molasses - it is very good and surprisingly versatile.

However, she has a few quirks that might annoy some people.

Chinese Cooking Demystified is another very good channel. It is excellent when it comes to educational value, as it explains how and why most things are done. They use traditional Chinese ingredients and tools, but provide substitutes as well. The channel certainly lives up to its name.

He is as lousy as those gif recipes that faggots like to share on twitter and facebook. Food might look good, but tastes subpar most of the time. Instructional/educational value is nonexistent. Babish' stir fry video is embarrassing for an eceleb chef, but hilarious to watch. He burns his oil, overcrowds his wok, and does not even know how to fry rice. All rookie mistakes. His 'Basics with Babish: Steak' and Blue Apron shilling videos are other unintentional comedy goldmines.

Babish is just a lackluster cook in a fancy kitchen, with fancy cameras, and fancy editing. His channels is nothing but style over substance, but there are people treating the guy as an authority on cooking.

Kosher salt is usually used in cooking because it has large crystals and tends to be less salty than other kinds. Both make it easy to control the amount of saltiness in your dish. Kosher salt also tends to be more widely available than other big or medium grain or flaked salts.

Table salt is the go to for baking however, and many chefs prefer to use flaked salt for things like tenderloin.

Most large channels funded by media companies are just soulless trash, but Epicurious has their '4 levels of…' series where one dish is cooked by a beginner home cook (level 1), experienced home cook (level 2), and a professional chef (level 3). Then a food scientist (level 4) goes over the process, comparing each chef and explaining what was done right or wrong and why.

There are little things you can learn from these videos and they can be good for inspiration. I never thought of adding orange peel instead of a carrot or sugar to improve the taste of canned tomatoes until I saw these videos. Some professional chefs do get a bit ridiculous with their dishes.

Tbh Epicurious is soulless corporate trash too. The series is always the same. Amateur uses pre packaged stuff and ketchup and can't stop talking about that it has to be quick and convenient, Home cook does it like every normal person would do it but talks like it's the best thing since sliced bread. Expert usually goes over the top like in this case where he grinds his own meat. Food "scientist" doesn't really give feedback what was done right or wrong or what's the proper way to do it, she just gives useless commentary on the dishes.

I like Bon Appetit's channel a lot, i thought it was going to be just soulless trash but it comes out quite genuine, most of the chef/personalities are pretty likeable too not all though, it has some dumb series made just for entertaiment such as Every Way to Cook X but it also has some more informative stuff, not so much anymore though.
