When I was a kid I hated mushroom but eventually I grew to like them, and now I have a bit of an obsession.
What are your favorite kind of 'shrooms, and how do you like to eat them?

I'm not a huge fan of mushrooms generally speaking, but I've been kind of curious about the cultivation aspect. Could I grow them and sell at a farmers' market without too many questions? I'd be a bit concerned about having the police breathing down my neck, which is understandably given that not all fungus cultivation is exactly legal.
I had a really excellent pork chop with chanterelles a bit more than a year ago at an upscale restaurant in Poland. I didn't find the mushrooms themselves to be particularly tasty; I guess the flavor was simply too strong, but the flavor they provided the pork was lovely.

Do you think the texture is really that different from other mushrooms?

Yes, they are more "leathery" than other mushrooms.

We Slavs love mushroom hunting. The very best all-purpose mushrooms for my opinion are porcini, Leccinum aurantiacum, chanterelles and Armillaria mellea. There's also one package of an oyster mushroom mycelium in my fridge to grow at home, but I need to get some sawdust for a substrate.

Do you add the mushrooms to borscht? Seem like it would be a fine addition to me.
I've always wanted to go mushroom hunting, every time I see them pop up in the yard after a rainstorm I think to myself "What if I just grabbed one and ate it on a pizza, what would it taste like?" I've read that even some of the deadliest mushrooms are delicious right up to the moment they shut down your organs and kill you….God is cruel.
Anyway I avoid mushroom hunting because I am colourblind so naturally it seems like a foolish endeavor.

>Do you add the mushrooms to borscht?
Indeed, we store plenty of dehydrated mushrooms for soups.
>I am colourblind so naturally it seems like a foolish endeavor
Here only the very few mushroom species are obligatorily deadly and even a colorblind person can differ them. There's also a general rule I hope is valid in US as well - no mushroom with pores under a cap is deadly.

Not much of fan of porcini, it takes on a rather unpleasant rubbery texture when cooked in a pan

Sure, you can cultivate the legal ones and sell them at farmers' markets. If you cultivate the illegal ones you'd better not sell them in the wide open.
