Depending on the Machine, I was able to run Project64 on a Pentium 4, albiet one of the later ones from the mid 2000s at a great speeds. PSX is also possible on them and the P3. No$GBA worked probably at one point, its likely you'll have to resort to builds from around the time. Don't know how big you are into doujin games, but I'd check out Melty Blood and the JAST memorial collection.

This is one of those games that everyone should play. Even if people don't like the genre or don't want to deal with the time limit, they ought to get a FAQ and play it that way. La Mulana is, for me, another game in that category–if the core exploration gameplay isn't fun, skirt it with a FAQ and play the rest of the game.

Always made sure to reinstall it on new PCs. In addition to VBA or Visual Boy Advance or something for GBA. And epsxe for PS1.
As for games, there are plenty of images being tossed around. Really depends on genre, and personal taste.

90's were peak flightsim/spacesim years, hunt down an old Thrustmaster stick with some pedals. Depending on how much you can stand wireframes models and gourad shading instead of textures, here's a short list.
Chuck Yeager's Air Combat: Impressive for 91'. Planes cover a variety from WW2 up to the Korean War. Many historical scenarios, as well as a mission builder that works like the opening of just about every war story. It also has a demo recording feature, with multiple camera angles.
Aces over Europe/Pacific: One year later, and an increase from 320x240 to full 640x480. More WW2 where you can fly for both sides of the conflict.
Strike Commander: Before there was Ace Combat, there was Strike Commander. Fitting between Wing Commander 2 and 3, just before Chris Robert's head got too big for his shoulders. You fly as a mercenary for an f-16 squadron in a fictional 2011 where, to no one's surprise, the world's gone to shit. There's some light business management aspects as you're responsible for buying ordinance and insurance for your wingmen.
Wing Commander:Privateer: If you were too young for Elite, this game was your intro to open world gaming. You can't go wrong with any of the Wing Commander games, but this one stands on it's own. Even though Chris never had a hand in making it. Fight, trade, run missions, and follow the story that, while cliche, is still good for it's time.

This game was interesting because of how phenomenally janky the controls were. You aimed a cursor on the screen with the mouse, but controlled literally everything else with the keyboard. Your suit made servo noises for turning your head and zooming your view and everything, so you kinda felt like you were controlling some robotic power suit thing by proxy instead of some you-move-and-the-suit-moves-with-you thing. It was the "immersive" kind of janky. Did a reasonably good job of drawing sorta large outdoor environments for such an old game, too. Graphics resolution was really low, and a lot of screen space was taken up by the interface, but that could've been a style choice.

It wasn't that great of a game, especially the enemies who oscillated from being dumb as dirt to being able to see across the map, and especially in those stealth sections. It was literally only hyped for its art-style, and it was developed with consoles and PCs in mind (particularly the former, as it was just a couple of years after Halo proved FPS could be playable on consoles). It had literally no impact on computer gaming at the time, whereas something like Raven Shield was a refinement of something that started on PC, and couldn't be played on consoles unless it was severely dumbed down.

If I wanted to put in games I liked in place of something I didn't like, I would've removed something like System Shock 2, Half-Life 2, or more of that indie shit in favor of games I liked. XIII had absolutely zero impact on computer games. Being your first FPS you played at 5 years old is not notable.

The original is an ok budget game, you can feel the limitations of the game from the heavy re-use of enemies, low enemy variety, and heavy boss re-use. It's slower than Leifthrasir since every attack in the original game depletes you stamina/POW bar. So you have to think further ahead to make sure you have enough POW left otherwise you leave yourself stunned in a long recovery animation. And because there's no dedicated I-frame dodge button you really have to keep in mind enemies's attack patterns and use your jumps/movement/attacks to move out of an attack's reach. Only two characters in the original game can block. In this regard it's better than Leifthrasir since normal attacks do not drain POW and there's little reason not to mash attacks on enemies and just i-frame dodge to phase through most attacks.
I do think it's worth playing through the original game and recommend it first since Leifthrasir's faster speed might make it awkward to play classic mode second. Original mode let's you choose between 4:3 or widescreen mode and lets you use a custom border of your favorite Odin Cutie if you play in SD resolution.
Leifthrasir is a different beast because of the massive combat overhaul. The whole philosophy of combat is changed since you no longer need to keep a stamina bar, besides Mercedes's ammo count, in mind when attacking. Dodging is through I-frame abuse so attacking and keeping pressure on enemies is near constant. This combined with faster movement in general and much more combat moves makes it massively faster than original mode. It reduces the lack of enemies and boss variety a bit by adding more types. The alchemy system is re-done to be much more flexible and you now have far more freedom to make potions, which can trivialize and break the game. Heroic Mode is a decent challenge, but Muramasa and Dragon's Crown's harder difficulties outclass it.
It's also a worthwhile game and I recommend playing it after original mode.

PS3 has a ton of Japanese niche and exclusive titles with some having some Vita ports.
Despite both consoles being a blur of normalfag cancer and multiplats after 2008, the Xbox 360 also had them for a while but the PS3 didn't stop getting them until the end of it's lifetime, shame some of them have the NISA stink on them.
