Tryhard answer: Neither, use stock or kritz.
Serious answer: They're both good at what is almost the opposite job. Quickfix can keep your entire team up to full which is good if you have an organized team (which considering this is a pub… well good luck). The Vaccinator, however, is really good when both teams are unorganized. When only a few teamates are coming in at a time the vaccinator is absurdly overpowered. It sucks to be against a vac uber pair with no team support. It's almost impossible to kill them.

From my personal experience, the Vacc is the better choice. It's not that hard to switch resistances to adapt to oncoming changes, and multiple crits in rapid succession can still kill a QF-ubered soldier. Not to mention the absurd rate at which the ubers charge for the Vacc. With decent communication or a good player (preferably both) you're essentially unstoppable, even against a well-coordinated team. However against L3 sentries it's a completely different story - you'd be better off using the QF. Also, bullet resistance plus the danger shield on a 24/7 2fort server is probably the best way to spend a weekend.
But really, it comes down to this question:
In which situations would it be more favorable to use the stupid gimmick ubers (Vacc, QF) over the normal uber?
Or alternatively:
Just use the fucking stock medigun.

FIrst off: Nice hat.
There's a time and place for every medi-gun. I personally use stock for attack and quickfix for defense. I think kritz is best for things like koth. whilst vacc can be good in several cases but is more about keeping the medic alive in the frontlines and making sure that everyone is healed rather than having über pushes/defenses.
So it depends on map, team, and playstyle. This is just how I use them and I suggest that you try every medigun and playstyle for yourself.

Please use the kritz instead of any other medigun.
Please don't use it one the Heavy unless right in the middle of a fight. Please use it on your friendly demo, soldier, or pyro. If they suck, use a normal uber on them instead if they're taking down a nest.
Everyone constantly bitches about how overrated the kritz is, and yeah, you have to have timing, but the point is that the heavy is often a poor choice for a kritz uber. Hell, sometimes a scout can be more effective. It's all about taking down high priority targets and sentries quick, whether pushing or defending.
Quick Fix is good if you're actually a team-healer, vaccinator is…okay, and interesting for the medic, but even when you're paying attention it's still not a miracle.

QF has a few practical uses against good teams. Vacc is a gimmick, a very fun gimmick, but a gimmick nonetheless.
