Most fantasy anime I hear of are all along the lines of Sword Art Online, Konosuba, Overlord, etc.. very high magic, colorful, full of weird creatures and silly plots. I can't seem to find something on the more realistic side of things, while still taking place in a fantasy world, as opposed to being straight up historical fiction.
Know of any that broadly fit that description, o' weebs?

i recommend to look for seinen manga, not some anime cause they tend to skip parts which built the dark, moody feels on it.

Junketsu no Maria, it has witches and angels with pretty much superpowers but the medieval world around that shit is pretty damn rooted down in reality so give it a try.
It would've been great anime had they forgone the whole witches with super-magic bullshit but thanks to the otherwise rooted down world it wasn't bad either, just decently mediocre.

Claymore is pretty much "Berserk: Girl Edition", and I loved it. Also much like Berserk, the anime (second anime? Movies? Never heard of 'em!) ends abruptly on the 3rd arc, so you'll want to pick up the manga afterward.

Maoyuu, Log Horizon, Spice and Wolf even are more realistic takes on fantasy. They're not particularly dark though. Some people liked Grimgar, I thought it was gay.
