crush 3/4 cup almonds into a powder. It is ok for some pieces to remain chunky. That ads character to the cookie.
Add 1 3/4 raw sugar and crush it together with the almonds.
Add 1 teaspoon vanilla extract
Add 1/4 teaspoon almond extract
transfer your concoction to a mixing bowl and add 3/4 cups of butter.
Mix on low for 1-2 minutes.
Add 2 teaspoons of baking powder.
Add 1 2/3 cups flour and continue to mix until everything is held together well.
Press into your cookie forms, and bake 10-15 minutes depending on your form and oven at 160 c.
Take them out let cool a few minutes and tap them to remove the cookies to a cooling tray.
Enjoy!

Should the almonds be raw? Because I have both raw and roasted almonds on hand. Also, dumb question, should the cookie sheet be greased?

If you heat the almonds in the microwave oven you will get the same taste effect as roasting them.
No need to grease the pan. There is plenty of butter in the mix. If you want to go full vegan. You can substitute olive oil for the butter. The taste will be different, but not unpalatable.
