Hard, hard question. Maybe the uchuu senkan Yamato remake? I have extremely fond memories of it, and my 3 most powerful computers are named after the 3 iscandar royalty tulpas. And there's some scenes of it that I extremely like that I remember vividly. An obvious one is the Yamato's launch where it breaks through the ground and flies up + the iconic music plays. But there's a bunch of later scenes too. And waifus, so many waifus I have to form a harem. Yuki-tan, Akira-tan, the gamillas fighter pilot waifu…
I also quite like code geass. It was my favourite anime for a while without question, I watched it very early on. But it's receded a bit now. But dammit, I really like lelouch and aspire to be as strategically intelligent as him.
Also like macross F. It was a ducking work of art, and never saw anything quite like it before. The battle scenes with the idol music just worked really well. Still listen to the songs from it every day.
For some reason, I also like cross ange. The story was really good, ange-tan was best girl, music was good, and I really enjoyed it. It was satisfying to watch and engaging.
I also really enjoyed LoGH. It's up there with the best, lived up to the hype, and did not disappoint.
The last episode of gunbuster is considered by me to skill be the greatest audiovisual work to have ever been created in the world. The ending was an absolute masterpiece. Diebuster was pretty good too.
More quick mentions of stuff I like: obligatory Evangelion, initial D, gargantia, sayonara zetsubou-sensei, the monogatari series, gurren lagann, Mirai Nikki, shaft's negima, assassination classroom, higashi no eden, shakugan no shana, grisaia, lain, etc

I become a weeb in full force nearly 4 years ago. I had a freind that was a weeb and even though I used to make fun of him for being a filthy weeb, he managed to turn me into one. Used to think waifus were weird too, and watched stuff "for the story", but, well, look at me now! Started out with dubs, but quickly went to subs and never turned back. Did streaming though. It's only fairly recently, within the last year, that I've been agressively seeking out anime and hentai that I like or consider significant, finding the highest quality torrent possible, and archiving it.

Alright alright, it's queued up.
The MechWarrior franchise landed in some hot water for outright cutting and pasting mech designs from several animes, including Macross, and then Harmony Gold sued them into oblivion. Even thought Harmony Gold's claim to the designs is dubious at best too.
It's been a long standing thorn in the side of MechWarrior fans ever since, because it basically outright killed the use of those designs which had become iconic, favorite mechs among the fanbase.
Only recently has the latest company to take over the IP made any progress in pushing back against HG's claims, and just not give any ducks either way to plop out the old mechs that everyone loved.
