Unsurprisingly, everyone has different tastes in men so I can't speak for everyone.
Different people like different muscle shapes, body tones, etc. I like almost every body type on men except for skinny and super fat and super muscled, for instance. Personally the most attractive bodies are the ones that look like they give the best hugs.
Symmetrical faces are good. Personally I prefer men over 30 and under 50 but I am flexible.
Confidence always seemed self-explanatory to me. Cautious optimism, willingness to try things despite the chance of failure, being a good winner and a good loser, and being supportive of others are all valuable traits.

Honestly, as with pretty much all orientations - confidence really is key. It's more than just talking straight; it's being comfortable, how you carry yourself. Books have been written on the topic and yet more will still be written.
One of my personal things and why I find a large attraction towards male is power. A male simply is more powerful than a female and that's often very exciting. Just be careful it doesn't end up as a 'my character can fit in any setting thing' since that can be a turn off to some. I would play up the stranger in a strange angle for such a character, amazed, confused or outright weirded out by what ever setting he ends up in.
I like the idea of it not being an ability he have developed though or something he's able off due to being powerful, but a consolence because he couldn't live up to expectations. Gives him a vulnerability that might attract people to take care of him or abuse him.

In general though, I think that's because they don't know what's a good way to make a manly character with a manly job. Personally, I find the best way to do characters is to select a few kinks, think of jobs/roles/characters who would have a daily association with that kink, brain storm from there, look for art, tweak.
Trying to work/layer in character motifs is a way to expand past that but I think, ultimately, masculine men tend to be associated with combat or aggressiveness so a lot of people try to prop them up by making them mercenarise as opposed to, say, an older 40 year old college professor who has a thing for ageplay and orientation play for his students, sometimes doing shady things to bang 'em. Or a camera man who has a thing for adrenaline rushes, being in danger and so goes all Nightcrawler-amateur-footage for superhero fights.
