It's always a little odd how much they love the symbols and motifs of the Church, but little of that is reflected in Japanese life.
The only person I can think of that's associated with anime who is probably a little more sincere about it is Yoko Kanno. She's a prolific composer for a lot of anime. She had Catholic parents and first developed her music training in church. I don't know if she's exactly religious herself, but you can hear the influence in masterpieces like the GitS theme:

Also to add to the cool factor, Origa the singer was Russian and Orthodox. The lyrics are a mix of Russian, Latin, and English.

I think that for most of them Christian religions are just another mythology, like Greek or Egyptian. They don't use it for any kind of deep theological meaning, even when the symbolism is accurate it's just world-building for them rather than any kind of theological relevancy.
