What are some arguments against atheism and in particular Matt Dillahunty's gumball analogy which he uses to prove that asking for proof of God's non-existence is shifting the burden of proof away from a positive claim to a negative.

Well, nobody should ask for a proof of God's non-existence. Every sensible person from Anselm to CS Lewis on the Christian side, and from Epicurus to Bertrand Russel on the atheist side has known that the burden of proof is on Christians to prove the existence of God. Otherwise, no Christian apologia would be necessary.
I've never heard of this neckbeard though, and as I've said above, it seems that this argument of his is so starkly obvious that nobody needed to say it. So maybe you need to find better books on the subject. I can recommend CS Lewis' Mere Christianity as a good start to learning about apologism.

Proof of The Christian Triune God? revelations of Jesus Christ, our Lord and Our God.
Faith is a gift. You have to get on your knees and beg as a dog at the table for it. Then you have to accept it.
I'm not going to try and prove it to people who love sin. There's no point.

Arguments against atheism have already been put forth it’s not our fault atheists are uneducated. I’ve heard some wild arguments against Aquinas like multiverses and self replicating universes that they have yet to prove. Sorry but the burden of proof is in fact on the atheist.
Put together your best rebuttals and attempt to debunk the non-Christian pagan records of Christ and we’ll see how they hold up.

This is true and it is nearly impossible to prove a negative and since you shouldn't believe in anything that is not 100% scientifically provable, not believing in God is illogical.
