John was the Gospel for Greek philosophers if you look at the way it's organized and the words the author uses. I don't think the author doubts they exist, but you have to understand your audience. Pagan philosophers would have scoffed at Christianity and not heeded it at all had the writer of John brought up demons and other things they would have deemed superstitious. It's best to save that stuff for when they understand the Truth in a deeper manner and begin to truly love God the way he ought to be loved and hate sin and the Prince of Darkness, not when they are neophytes to it.
