It's called a spiritual retreat. You live with the monks for a time but aren't taking any vows. I don't know if they will let you stay for a whole year, but I don't speak on behalf of any. Just look up the local monestary and ask them yourself.

I think he was referring to the people that go on those retreats, lol. But either way OP, until you're an actual monk, you'll still be a 'normie' yourself, so I wouldn't be casting stones. Everyone has to follow the same monastic practices and schedules during those anyway (as far as I know), so I wouldn't worry about it too much.

If not expect about 5€ in food a day if you do the Camino de Santiago

Nice idea, monasteries usually have shelters for pilgrims you can stay there, pray with them and ask for guidance. Or you could rent a room and help them financially.
But if you're only "for taking a break" I'm afraid that just won't work, at least in my country monasteries get like 100 requests a year and monks say you can count the true monks with one hand, without using all of the fingers; they won't take anyone not serious for a discernment

300 € + perhaps some 250€ extra cash + the tickets from wherever you are to Spain/Southern France. You think that's enough?

Yeah, pilgrim shelter are around 6-10€ and the private ones well, +10€.
There's some "free" shelters (Federación de Asociaciones de Amigos del Camino y Hospitaleros Voluntarios)
you can give whatever you want or offer your help in anything they need so if you want to spend less organize around them; it really depends whether you would like to be comfortable or not.
You could also sleep in the forest for free :^) (sometimes shelters are full, they might open a Sports centre or something for pilgrims but if not… The French way in summer is packed but it's the best time so SLEEPING BAG is a must. Tent if you're scared of spiders)
I've seen some business that organize your trip but it's expensive and really kills all the experience.
Around 550€ on your pocket I'd say that's enough, like I said depends on how "comfy" you want to be; if you think you can go on a similar diet like the one I posted, try eating it for a week or two and see if its adequate for your energy consumption
Some public shelters offer dinner and breakfast, the one I recall was 9€ and 4€ respectively.
The supermarket diet is the best as you see. You can also buy lentils or whatever and prepare it at the shelter.
For drinking in the way a river or a fountain, remember to check if it's drinkable.
You also can ask people in the villages/towns for food, if you're lucky to find anyone charitable
REMEMBER to choose a season where the fruit you like is growing and TO PREPARE PHYSICALLY AND SPIRITUALLY, the book "imitation of Christ" is capital to carry I think.
I recall reading that "the average pilgrim spends 30€ a day" yeah, dumb pilgrims
