I also love udon.
Those thick noodles are good for dishes that slow-cook with broth, as they soak flavour very well.
I've also used udon for stir-fry. again, they soak flavour if I'm simmering in soy/oil/vinegar and become a crisp brown, holding in that soy taste as it snakes around the other vegetables.

I was making miso udon, on a slow boil you could actually burn off a lot of water and really get a good flavour, and the udon will have soaked it all in, soft and ready to eat. Would often make eggdrop variants.

Good miso paste is enough for broth itself, but it has to lose a bit of volume through steam, slow boiling, and the broth settles and becomes a very delightful miso udon.
